RED ONIONS - The Real MVP

So, for a long time, even before I started this journey, I have always loved onions. Now I have more reason to love them.  The Ugandan way of cooking just about anything is onions and tomatoes + dry spices and add whatever food you want to cook. But I have recently learned that tomatoes are night shade vegetables - so they increase inflammation in the body. That means that I cut them out of my diet.  So, all I cook with are onions. Especially red onions. And I like them .  Nutrient wise -: Red Onions are very low in Sodium, they contain no fat or cholesterol. They contain fiber and have lots of  folic acid and Vitamin B.  I usually cook them in coconut oil and add a bit of pepper. That does the magic.  The trick is to cook them until translucent -that is when you know that they are cooked. Good thing is that is usually in 3- 4 minutes of cooking.  I also like it when they get a little crspy. I eat them on everything with everything
