Going Vegan - Fear No More
When you have eaten 'meat' all your life and you are told to go off meat sometimes it is hard.
Especially if this is not a situation was/is not voluntary decision.
I am 'meat free' by choice, but also because my body can not digest it well. But I have been very glad for this one thing - Mushrooms.
Mushrooms a re a great 'meat substitute'. They are easy to prepare but also very tasty and also versatile. From the small wild mushrooms to what you can buy in markets and supermarkets - when well cooked, mushrooms are so tasty.
Mushrooms are a great sources of protein, fiber, B vitamins (especially niacin), vitamin C, calcium, minerals, and selenium. They also contain antioxidants that are unique to mushrooms, such as ergothioneine, which according to studies is a highly powerful antioxidant. For me - whose body needs constant detoxification - this is great for me.
So, yaay to Mushrooms.
